With this heat wave upon us we all like a nice cold ice cream or even ice cubes in our drinks, so I decided to try a couple of recipes this morning and after waiting for them to freeze and the obligatory taste test I can now share them with you.
This has to be my favourite recipe which is a banana and blueberry chia cheesecake with a slight twist in the fact it’s not baked or chilled making it super quick to make and tastes delicious. Plus it is so much healthier than your average cheesecake.
A while back I was trying to make a cake using ground chia seeds as flour and replacing butter with sweet potato as I had heard using vegetables in cakes was actually quite nice. The result however was more like a malt loaf and tasted nice but was certainly not what I expected!
