This has to be my favourite recipe which is a banana and blueberry chia cheesecake with a slight twist in the fact it’s not baked or chilled making it super quick to make and tastes delicious. Plus it is so much healthier than your average cheesecake.

 

*1 tub of Quark cheese, I like the Lake District version

*1 Chia Charge banana flapjack

*1 heaped teaspoon of chia seeds

*set honey

*some pumpkin seeds 

I made 3 portions with this amount but you can make more or less depending on how much you want to eat. I thought this portion size was perfect though.

To make this all you need to do is divide the flapjack into 3 small glasses, ramekins or bowls and squash it down. 

Then in a separate bowl mix together the quark, chia seeds, blueberries and a heaped teaspoon of set honey. Now you are ready to construct the cheesecake by layering the quark mix and banana slices on top of the flapjack. Finally top your cheesecake with a small dollop of honey and some crushed pumpkin seeds, now it’s ready to eat…. Enjoy.

This is great as a snack or a pudding after your dinner.
